Passing Clouds The Angel Cabernet Sauvignon is sourced entirely from the Serpentine Vineyard in Bendigo, grown on the banks of the Loddon River in sandy clay loam soils.
The fruit is destemmed and hand sorted before being vinified in open stainless steel fermenters. The batches are hand plunged twice a day. A portion see post-ferment maceration.
After 12 months maturing in French oak, the finest barrels are selected to comprise the final blend. They are aged for a further five months, then bottled. The wine is only released after a minimum of 12 months bottle maturation.
Deep purple, Passing Clouds The Angel Cabernet Sauvignon has powerful tannins held taut by fresh acidity, black fruit flavours and spice. Cellaring potential is 12 years.
